Tuesday Recipes – #strangebutgood Veggie Rolls

Hello Boys and Girls!

No small talk here, just one thing – THIS recipe might sound strange, but it is soooo good!! AND it contains FIVE different vegetables – eggplant, broccoli, cucumber, beet and spinach!! Score!

Today I present you the



Ingredients for the omelett-rolls: 

2 eggs

4 eggwhites

70g cooked beet

100g spinach leaves

2 tsp nutritional yeast

1 tsp pepper

1 tsp grated garlic

1 tsp parsley

For the filling: 

4 tbsp of any kind of Hummus, I made a batch of my Eggplant Hummus, but nixed the Avocado.


100g steamed broccoli

1/2 cucumber


Prepare 2 shaker or bowls.

In 1 bowl, mix 1 egg&2whites, plus the spinach, the yeast and half of the spices.


In the second bowl, mix 1 egg&2whites, plus the beet, the yeast and the other half of the spices.



Heat up 2 skillets on medium heat and cover with cooking spray.

Poor the mixtures into the pans and cook like an omelett.


Get someone to flip it.

Because you might fail, like me.


Take the omeletts out and let cool a bit.

Spread Hummus on both omeletts and fill up with cucumber slices and broccoli.

Roll up, and serve with leftover veggies.

Are you a flipping master? I definitely have to work on it – Pancakes I can do, but omeletts and crepes….oh my.

  1. Lucie!! I’ve missed you! I’ve been super MIA in the blog world so I’m pretty ecstatic to be the very first commenter on this post today! Girl, this is a super creative (and colorful!) recipe! I love the idea of blending veggies into the egg mixture as an alternative to adding them whole – so sneaky! You won’t believe this, but I don’t think I’ve ever spread hummus on my eggs. Must try!

    I’m definitely not a master omelet flipper, however I’ve figured out a pretty good technique for doing a traditional French fold. Favorite hummus flavor: sweet potato!

    Ohhh these look very strange but good! I like it.
    I’m the worst omelette flipper in the world. Well maybe not the world, but it’s high up there.
    For some reason I just can never get it quite right.
    I think my favorite hummus flavor is just the original one – although I mostly have to make my own hummus because I get weird allergic reactions to tahini which is sad.

    • Well I am with you on that ranking! I can flip pancakes, but omelettes? No way.
      I actually never use Tahini in my Hummus and it still turns out totally delicious!

  3. I’m 100% with you on these… until you get to the broccoli filling. I just can’t eat cooked broccoli! I think carrot sticks instead. Or broccoli slaw?!

    • I think I know what you mean with the cooked broccoli. It has a funny smell, right?
      And YES, you surely can replace it with ANY vegetable, these were just the ones I had on hand!

Now those are definitely some of the most creative omelettes that I’ve ever come across… awesome way to sneak some veggies in 😀 I have to admit that I’m a complete disaster when it comes to all things flipping. Heck, I don’t even bother making pancakes because I’m never patient enough and end up flipping too early and wrecking them. But I’m very much open to the idea of someone coming to make breakfast for me 😀

  5. I have a feeling that I would not do so well on the flipping part with these. I am by no means a master chef in the kitchen. I am loving all of the added veggies in here, though :). And everything with hummus is good, right? I am loving TJ’s horseradish hummus righit now.

  10. We are into ANYTHING with hummus! As for the flipping part, we used to struggle with flipping crepes until we saw someone else making them at a restaurant – they made their’s nice and thin on the pan and DIDN’T flip it! Just let it cook! So we tried it, and it worked fabulously! As for omelettes, we don’t flip those either! We like to make ours thin, put the toppings in the middle and fold the sides up. Just a personal preference, though. 🙂 Of course, both of those require a large pan!

    Omelets stuffed with hummus? That sounds so good! Although, yeah, I can’t flip to save my life, and about 90% of the time I MEAN to make omelets, I end up with scrambled eggs. Scrambled eggs topped with hummus? Bet that would still be delicious!
